- Preheat oven to 350°F. Prepare and bake the vanilla cake according to package or recipe instructions. Allow to cool completely before proceeding.
- Crumble the cooled cake into a large mixing bowl, breaking it down until fine, uniform crumbs form throughout.
- In a separate bowl, beat cream cheese, softened butter, powdered sugar, and vanilla extract together until smooth and fully incorporated.
- Mix the prepared frosting with the cake crumbs until fully combined. The mixture should hold together firmly when pressed in your hand.
- Scoop approximately tablespoon portions of the mixture and roll into 24 uniform balls. Arrange on a parchment-lined baking sheet and freeze for 20 minutes to firm.
- Melt white chocolate or candy melts gently. Dip each chilled cake ball into the melted coating, ensuring complete coverage. Return to the lined tray.
- While the white coating remains soft, pipe or apply a small amount of colored candy melt (blue or green) onto the center of each ball to form the iris.
- Once the coating has set, apply a small dot of dark chocolate or black candy melt in the center of each iris to create the pupil.
- Using red gel food coloring or decorating gel, draw small, jagged lines radiating from the iris outward to create spooky blood vessel effects.
- Allow all decorations to fully set before serving. For best texture and handling, serve chilled.
