01 - Whisk together soy sauce, oyster sauce, sesame oil, honey, rice vinegar, and cornstarch slurry in a small bowl until combined. Set aside for later use.
02 - Heat a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it apart with a wooden spoon, until browned and fully cooked through, approximately 5–6 minutes. Transfer to a plate and reserve.
03 - In the same skillet, add a splash of oil if necessary. Sauté garlic, ginger, and white parts of green onions for 1 minute until fragrant, taking care not to burn the garlic.
04 - Add broccoli, bell pepper, and carrot to the skillet. Stir fry for 3–4 minutes until vegetables are just tender but still maintain their crisp texture.
05 - Return the browned turkey to the skillet. Pour the prepared sauce over the mixture and toss thoroughly to coat. Continue stir frying for 2–3 minutes until the sauce thickens and evenly coats all ingredients.
06 - Remove from heat immediately. Sprinkle with toasted sesame seeds and garnish with chopped green onions or fresh cilantro as desired. Serve hot alongside steamed rice or noodles.
